While the most recent hurricane has hit some areas of Florida pretty hard, most people know that come wintertime, the further down south or towards the desert you go, the warmer the weather will be. This tried and true fact makes November one of the best times to visit Florida, especially for travelers wanting to engage in lots of opportunities for nature-viewing. You won’t need binoculars in the Sunshine State to spot the sight of wintering birds at Florida’s Merritt Island National Wildlife Refuge -- they make an annual pit stop along the major migration corridor located near Cape Canaveral. You and the entire fam can also stare at a colorful gathering of pink roseate spoonbills that hide out in various estuaries around the area come November.
Dubai has pretty much perfect weather in November, and this is really the first month since April when it's not scorching here. Fortunately, the crowds are also light because most people wait until Christmas to start traveling to warmer places. Dubai can be incredibly expensive if you have a big budget, but it doesn't have to be. You can get good deals on non-chain hotels and even apartment hotels this month, and if you skip the hotel restaurants and the fancier places in malls, you can eat well on a modest budget here.
The rainy season is over so it's an ideal time to base yourself in Chiang Mai for some outdoor activities in the area. There are temples like crazy in the city center between the old walls, but even more interesting ones in the area just around Chiang Mai. There's also great trekking and such, available quite affordably from any travel agency in the city.
Thank you for the kind words. I know what you mean about the image of Thailand and Bali, particularly among Australians. On one hand you could go to either of those places and easily avoid the most notorious party neighborhoods, but it’s probably easier to head somewhere else since both of those places are so crowded that time of year anyway. I do have a few suggestions, which I’ll describe briefly and then if you want more details about any that appeal to you I can do that in a follow up comment.
December is a popular month to go cruising around Hawaii and Mexico. It’s an ideal family trip, especially with most kids in the US out of school for the holidays. Experience the Hawaii’s tropical paradise. Pick a popular cruise liner and visit ports of call like Nawiliwili on Kauai, Honolulu on Oahu and Kona on the Big Island. If the Caribbean floats your boat, we recommend taking a cruise to explore Mexico’s Costa Maya, Cozumel, Ensenada, Acapulco, Cabo San Lucas, Puerto Vallarta and more.
Overall, I’m declaring this vacation a great success! Not only did we have a wonderful time at the parks riding all the rides and enjoying the shows, I did not feel at all deprived or put upon food-wise, and not even once did I go hungry. All but one of our meals, including those at the hotel, were counter-service only establishments and I was able to find something filling and tasty for each meal. After this experience here are my recommendations for eating on vacation:

I think the best place for what you want is Thailand. You can choose from Phuket or Ko Samui or one of many other islands, and they all have nice beaches and good nightlife at a very reasonable price. There are other places in Asia that have warm December weather, but Thailand’s tourist infrastructure is better than the others so it’s just much easier to get around and do what you want. If you’re pretty simplistic when it comes to food, you can always bring nuts with you. They last long, they taste great, and they’re packed full of fats (if you choose correctly). Macadamia nuts and Brazil nuts are among the top high-fat nuts out there, and they’re well worth the extra cost if they save you from an accidental cheat right at the end of a great vacation.
If an apartment isn’t your thing, or you have to book a hotel for your business trip, then there is one upside: the food. Typically hotels will include some sort of breakfast, and occasionally some sort of dinner plan. In Portland, we stayed at a great hotel that included both. Breakfast usually consists of pastries, waffles and oatmeal – but they almost always have eggs, bacon, and sausage ready to go on your plate.
My other two suggestions are San Juan, Puerto Rico and Cartagena, Colombia. Both cities have really wonderful colonial districts and modern resort districts nearby. San Juan is more expensive, but still reasonable, and it has far better beaches. Both have a bit of rain in November, but it tends to come and go quickly. It's getting cold out there, so consider a journey that leads you into a warm museum. Whatever your interest, there's bound to be a specialized one to engage it. If art and sculpture are your passions, discover some favorite art museums around the world. And consider that you can make a day of it soaking up culture as many contain surprisingly good restaurants to visit in between your viewing.
If you are aware of what you’re eating throughout the day, you can better plan for indulgences. When traveling to a place that is known for their cuisine, enjoy eating while remaining balanced about your diet. Instead of getting a sweet all to yourself, maybe share it with whoever you are going. By sampling small portions of food, instead of overeating till you feel sick, you can enjoy your vacation food while still keeping your Keto Diet in mind. Alternatively, be sure to get as much exercise as possible (walk to destinations instead of taking a bus or driving), and the extra exertion will help use up any extra calories (or carbs) that you may eat.
One of the best things about Puerto Vallarta is that, unlike most of the Caribbean destinations, this is a real historic town rather than a purpose-built resort community. That means that there are small and authentic (and cheap) restaurants catering primarily to locals, so you get a much more authentic experience if you prefer one. The hotel zone close to the airport is modern and posh, but you are a short taxi ride away from the lovely center of town.

If you book a resort hotel from home you'll probably think Goa hotel prices are much higher than you were expecting, but if you book a family-run place once you arrive you'll still find fantastic bargains. It's probably wise to book a few nights online before you get to India, because it can be incredibly confusing at first. After that you might be able to find a similar place for half the price by just checking around the same area.
If this were last year I might have also suggested San Juan, Puerto Rico or Cartagena, but both of those have issues at the moment. If for some reason you don’t like what you see in Costa Rica, there are also some really nice resorts in Panama, especially in the San Blas Islands area.
