As for Europe, it’s the low season there at the end of the year and you might be able to find a reasonable flight. Have a look at my list of best Europe destinations in December for weather and comments about each of the better places. If money is tight then Europe can be challenging because getting from place to place can add quite a bit to the daily total. There is no better time than December to discover a still (somewhat) under-the-radar part of the Caribbean. This verdant, five square mile island has seen a lot of activity recently, from a new mega yacht club to a Soho House to the Mandarin Oriental's first property in the Caribbean. More is on the horizon for this picturesque piece of paradise, but go before everyone else discovers it.
Preheat oven to 425 degrees. Line a rimmed baking pan with a sheet of parchment paper. In a medium bowl, toss the green beans, garlic and olive oil together until completely coated. Then, spread the coated green beans on the lined pan in a single layer without crowding. Season with salt and pepper, then roast in the pre-heated oven for 15 minutes. Remove from oven once during this time to turn the beans so they cook evenly. When finished roasting, remove from oven and place beans on serving tray. Before serving, drizzle with extra virgin olive oil and sprinkle with grated Parmesan cheese. This makes a great recipe for Thanksgiving dinner sides.

Bali has nice weather in the first half of November and it’s very family friendly as long as you don’t stay on the nightlife streets of Kuta Beach. That is possibly your best choice. Dubai has great weather in November as well, and it’s very kid-friendly. There are shopping malls there that also have huge and modern play centers that are sort of like amusement parks there. And there are nice beaches as well. It’s unfortunate that the weather close to India limits your choices that time of year, but either of those could be great and they are both fairly affordable with frequent flights. Warm weather, Caribbean beaches, and fascinating history beckon visitors to this coastal city during December. Once a 16th-century Spanish port, Old Town Cartagena, surrounded by ancient stone walls, is a UNESCO World Heritage site. Visitors strolling through its streets will see original Spanish Colonial architecture among new restaurants, restored homes, and boutique inns. From street food to upscale restaurants, Cartagena offers the best in local seafood, meat, and fresh fruits. In December, the city becomes a festival of lights, with nativity scenes, decorations, and holiday celebrations culminating with New Year’s Eve fireworks. Holiday shoppers will want to take home gifts of colorful handcrafts sold at markets throughout the city, with special Christmas markets arriving in December. Colombia supplies nearly 90 percent of the world’s emeralds, and a quality gem from a reliable source would make a memorable keepsake. Nearby Rafael Nunez International Airport makes arriving by air quite convenient, and visitors will find a range of lodging in and around Cartagena. For a luxurious vacation, the new Conrad Cartagena offers four pools, a private beach club, a golf course, seven restaurants, tennis courts, a spa, and stunning ocean views from every room.
Traveling in December means you either fully lean into the holiday season, or else escape it entirely and flee to somewhere warm. Personally, I try to appreciate the cold weather while we have it and max out on warm seasonal beverages, colorful lights, soft snow, and good company. True, some places are overwhelmed by the capitalist engine that powers Christmas, but you can still get a non-denominational-winter-wonderland fix, if you know where to look. No matter your travel preference, there’s a perfect place in this world for you to bask in those final sunsets of 2018.
Surprising to some people, December can actually be a bit cool in Mexico City, especially at night. Its elevation keeps it mild all year, but at least the rainy season is totally over by December, so it's an ideal month for a cheap cultural holiday, perhaps combined with a trip to one of Mexico's many beach resorts. You can get cheap flights between Mexico City and Cancun or Puerto Vallarta, for example.
Vietnam might be your best choice of the three. Most people (if they can) fly into Hanoi and fly out of Ho Chi Minh City (Saigon) or the other way around. Again, you can travel between them by train, although getting tickets can be a bit complicated. Hanoi is really interesting and nice (and super cheap). The best tourist city in Vietnam is Hoi An, which is between the two big cities. There’s a nice beach there and a bit farther away is Denang, which has large resorts along an excellent beach. Nha Trang is another good beach city in Vietnam, but probably not great for families. Ho Chi Minh City is bigger and more crowded than Saigon, but it’s also more modern (and hotter). You could spend two really nice weeks going north to south in Vietnam with a long stop in Hoi An.
The subtropical climate of Hong Kong means that summers are particularly hot and wet, and spring is warm and humid. November is the sweet spot, with clear, sunny days and mild temperatures. During your trip, you'll want to take a traditional junk boat ride on the harbour (seen here) and check out the sweeping city views from Victoria Peak, which you can reach by tram.
