Not all the extra ingredients are keto friendly. Some of the dressing mixes are high in carbs as well as some of the extra ingredients such as tortilla strips and croutons. Depending upon how many carbs you eat in a day you may want to avoid those mixes, or at least remove some of the ingredients, and stick with the mixes that only contain salad greens.
That is an interesting request. I’ve spent about 18 total months in those countries you mention and I’ve yet to see a single rat. If your fear of rats is just that, you could go to any of them. But if you have a more general fear of things that are untidy then I’d definitely avoid India. It’s a fascinating country, but there are piles of garbage all over the place.

If art and sculpture are your passions, discover some favorite art museums around the world. And consider that you can make a day of it soaking up culture as many contain surprisingly good restaurants to visit in between your viewing.
Cambodia could work because Siem Reap is inland and the amazing Angkor Wat temples are worth a full day or two, and the town of Siem Reap itself is quite nice. You could actually combine a couple days in Siem Reap with a few days in Bangkok, and take a (cheap) luxury bus between the two. Bangkok is a really fascinating city with a lot to see, plus it’s a great transport hub. The other main non-beach option in Thailand is the city of Chiang Mai, which is wonderfully inexpensive with quite a bit to see. It’s even a bit cool during December, so that might be a nice change of pace from India. Many people are also going to Myanmar these days, although I haven’t been yet so it’s hard for me to recommend it. I’d say if you combined 2 or even 3 of these places you could have a very interesting holiday.

For those looking for an even calmer slice of paradise without all the holiday festivities, try Waimei on Kauai’s southwestern shore, which offers calm waters and sandy beaches that are especially attractive in the early winter months. Get away from all the gloomy weather of the East Coast by trying out a Waimea vacation rental—it’ll definitely make for makes the perfect base to explore all Kauai has to offer.
There are snack stands everywhere at the theme park, and I can tell you from the experience of at least yearly visits that most choices at the stands are decidedly NOT keto-friendly. In recent years they’ve added what I’m sure they consider “healthy” choices, but most of those consist of yogurt and fruit with dip. You may, upon occasion, come across some carrots and celery with dip, but it’s very hard to find.

Those wanting to hike to Machu Picchu will also find this to be an ideal month, since getting in a group will be easy even without much advance notice. The train to Machu Picchu is expensive year round, and reservations should be easier to get the day before this time of the year. Hotels are always cheap in Cusco so you can afford to get something nicer than you are used to this month.
Sri Lanka doesn’t really have a good infrastructure for budget travelers at this point. There are loads of nice hotels if you are willing to pay US$40 or more per night, but almost nothing below that except for a few hostels. I haven’t been to Palawan but I have been to Boracay and Palawan can’t be too much cheaper. Boracay doesn’t have many budget options either, so my guess is that Thailand or Cambodia is your best bet.
Two other suggestions would be India or Sri Lanka. Except for a few beaches in Goa, neither of those attract the party crowd, and both are excellent for scenery and culture. India is cheaper as long as you minimize time in Mumbai and other big cities, but that is good advice for many reasons. Sri Lanka is a bit better organized, and on your budget it is good value and easily affordable. There are good beaches along the south coast of Sri Lanka, but India is probably better for beaches.
Mexico’s spectacular Día de Muertos (Day of the Dead), bewitches Mexico City at the start of each November. Donning the skeleton face paint for the mass parades in the main Zócalo square is a must, but take time to step back from the party and seek out more intimate family celebrations where deceased loved ones are honoured with candles, sugar skulls and, of course, tequila. If you’d prefer to relax with a rum, then Barbados in November may be more to your tastes. The sugar-cane liquor is thought to have originated here in the 17th century and continues to be the local tipple of choice. Toasting the sunset from one of the island’s magnificent beaches is a quintessential experience.

Hotel prices remain low through all of November for the most part, so you'll have a good shot at deals at 3-star and above beach resorts that are trying to fill rooms during the slow season. Even if you are paying near the high season rates the hotels and everything else are bargains here compared to almost anywhere else. Cartagena is one of the cheapest places to travel in November on a beach, and you'll get less rain as the month goes on.
