Hi Maria, Intermittent fasting is absolutely good for the Mitochondria. Keto diet should not be followed for long stretches of time due to the way long-term keto is affecting your body. If you can, try to stay at a hotel or hostel that has a kitchen which guests are allowed to use. You can also elect to find home-share style lodgings, as people often rent out their homes during peak vacation times for tourists to use. Once you have a kitchen, you have control over what you purchase and what you eat. An added benefit of this style of travel, other than the fact that you can stick to your Keto Diet effectively, is that you get to experience the local side of life. Going to grocery stores, choosing from local ingredients, and cooking for yourself will help make you feel like you’re a part of the culture, instead of only a visitor.
And as you mention, Bali could actually work for you. I’ve spent two Decembers in Bali, and December is quite a bit rainier on average. Still I had a great time and it was sunny most of the days. The rain in the tropics (and Bali is almost ON the equator) tends to come down in 30-minute bursts rather than drizzling all day, so it’s usually pretty easy to avoid. The best part of Bali is there are loads of things to see and do, and the nightlife is excellent. The Kuta Beach area is fun for at least a few days, but I wouldn’t spend too much time there. You should also spend a few days in Ubud, which is very touristy but also interesting. And you could spend some time in Lovina, which is along the northern coast and it has all of the charm of Bali from 20 years ago before most of it got overbuilt. With all the temples and other local attractions, there is always something interesting to do, which is not true of many other places with great beaches and nightlife. November is a perfect time to visit Bermuda, with temperatures in the mid-70s and pink sand beaches that are less crowded than in high season. There are many ways to explore the 21-square-mile island, from under the sea where you can snorkel or dive among coral reefs or shipwrecks to the Bermuda Railway Trail, an 18-mile abandoned rail bed that winds through scenic landscapes and shorelines. The Crystal Caves take you into an underground world with a subterranean lake and white limestone stalagmites. The 36-acre Botanical Gardens, established in 1898, inspired John Lennon during a two-month Bermuda stay that led to his Double Fantasy album.
The 17th-annual Hilton Head Island Motoring Festival and Concourse d’Elegance takes place Oct. 26-Nov. 4, attracting automobile enthusiasts and all who enjoy the southern charm, splendid fall weather, and extraordinary classic cars. The Hilton Head Island Oyster Festival (Nov. 9-10) is an oyster extravaganza with live music, crafts, a Kid Zone, and sports lounge. A stay at the Inn and Club at Harbour Town at the Sea Pines Resort will provide luxury and comfort in low country style. Or book a home rental through Vacation Company. 
Interestingly, December though February do get a bit cool in Cairo, so it's not a great winter break, but in November it's still pleasantly warm and bone-dry so you can enjoy the outdoors for long periods of time. If you don't mind staying in a locally-owned hotel you can save a lot of money and see some old-world charm at the same time. Reservations in advance aren't necessary, but it's best to book your first couple of days just to avoid all the confusion once you arrive.
Located on the north Pacific coast of Costa Rica, the 15-mile peninsula is home to lush jungles, postcard perfect beaches, and five-star hotels. It is decidedly remote (the nearest “town” is a 45 minute drive away) but sometimes, remoteness is exactly what a winter getaway calls for. Though Papagayo is the kind of place where you might be tempted to never leave the confines of your resort—there’s an Andaz, a Four Seasons, and a community of luxury villas to rent—it also caters to adventure lovers, with activities like ziplining, jetskiing, and four-wheeling through the jungle. Stick with later in the month to avoid any lingering rain (rainy season goes from May to early November.)
November is a wonderful time to explore this diverse country without the crowds and heat of the summer months. The ancient city of Marrakesh presents an uncommon blend of ancient traditions and modern conveniences. Accommodations include traditional Moroccan houses, or riads, once the homes of upper class Moroccan families. Riads range from budget-friendly room rentals to luxurious palace-like dwellings. Shop the souks or markets of the old city for leather goods, textiles, pottery, spices, and much more. Be prepared to haggle with the vendors for the best prices.
More good news comes with the fact that there are two other great resort areas that are each about 90 minutes by shuttle from Montego Bay Airport, so you can almost as easily reach Ocho Rios or Negril, both of which have a different vibe that you might prefer. Bargain hunters will also find pretty amazing prices at the all-inclusive resorts, particularly those in Montego Bay and Ocho Rios. If you prefer a quiet beach area lined with smaller hotels, restaurants, and bars, then head to Negril.

Depending on where you are going on vacation, you may have a measure of control over what you will be eating. For Keto dieters who are staying at a hotel and will be traveling from tourist spot to tourist spot, check with your hotel and see what kind of meal options their restaurant offers or whether there’s a continental breakfast. There may be fewer Keto-friendly options to choose from, but you will likely be able to find something to enjoy. Also, when out traveling, be sure to stop at grocery stores and purchase some Keto-friendly snacks that travel well, such as cured meats or cheeses, which can help keep you from overindulging.

In India I’ve always had good luck with the trains by booking at least a couple days in advance, and also being flexible and only going when an AC3 ticket is available. As you know, the actual train stations are nightmares. But every hotel has a person who can fetch a ticket for you by going through the back door and bribing someone at the train office. Like a AC3 ticket might cost US$20, and for an extra US$4, your hotel will go buy it for you and it’ll be waiting at the front desk later that day. It’s a pretty sweet system.
The other place that comes to mind is Croatia, which also has reasonable weather in November. I’d recommend focusing on Split, which has many similarities with the more-famous Dubrovnik, but it’s easier to reach, much cheaper, and more authentic because Dubrovnik has become kind of cheesy as a cruise port. You could even take a bus to Mostar or Sarajevo in Bosnia for a couple days. The coast in that area is beautiful and there won’t be many other tourists that time of year. I hope these ideas help. And if you are mostly interested in adventure and nature rather than cities, you might also consider India. The cities in India are complete insane asylums, but once you get outside of them it’s a beautiful country. The area of Kerala and its backwaters are a big highlight. They’ll remind you a bit of Sri Lanka in some ways, although things are cheaper and the scenery is quite different. The various beach areas of Goa, just to the north of Kerala, are also worth considering.
You mention New Zealand and of course it’s summer there then, so it would be a good choice. However, all of these places will be crowded and near peak hotel rates if they are warm. So I’ll be happy to give you advice if you tell me if you’d rather visit one or more European cities in the cold season, or if you are looking for a warm place like New Zealand where it will be fairly crowded. By the way, the southern European cities such as Rome and Barcelona are lively and enjoyable that time of year, as the Christmas season goes on, and there aren’t too many tourists except for a few that travel to see their families around the holidays. So it can be a good time for southern Europe, as long as you don’t mind wearing a jacket or jumper during the day, and maybe a bit more in the evening.
