However, I also happen to be an athlete and about a month ago I reached the point where I had almost no power, no energy, constant hunger (and “hanger”) and cravings for practically anything bad like alcohol, sweets, carbs, artificial sweeteners or energy drinks. In Laos, Luang Prabang is a really lovely city, and Vang Vieng is nice, but Vientiane is kind of plain and probably not worth a stop. I don’t think I’d recommend Laos for a multi-generational trip, unless you just want to fly into and out of Luang Prabang. Laos is really interesting for backpackers and adventure travelers, but it’s behind the times for family travel.
Preheat oven to 425 degrees. Line a rimmed baking pan with a sheet of parchment paper. In a medium bowl, toss the green beans, garlic and olive oil together until completely coated. Then, spread the coated green beans on the lined pan in a single layer without crowding. Season with salt and pepper, then roast in the pre-heated oven for 15 minutes. Remove from oven once during this time to turn the beans so they cook evenly. When finished roasting, remove from oven and place beans on serving tray. Before serving, drizzle with extra virgin olive oil and sprinkle with grated Parmesan cheese. This makes a great recipe for Thanksgiving dinner sides.

It would probably be a bit more expensive, but another idea that could be great would be to fly to San Juan, Puerto Rico, and rent an apartment for two weeks. It’s a wonderful place that is family friendly, and rental apartments can be good deals. It’s obviously peak season there as well so nothing will be cheap.
