As for the Northern Lights, Iceland is one to consider, and its Aurora Tourism sector is pretty famous. You can get a cheap flight to Iceland from London or most other large cities in Europe, and it’ll cost about the same as a flight to Stockholm or Oslo. If you want to stay on the continent, I’d think about Sweden, even though Norway has more northern area. Both are very expensive, but Sweden is a bit cheaper and easier to get around in.
If you are more interested in nature and adventure than culture, then the top choice would be Costa Rica. The country has many beautiful national parks and it’s filled with things like zip-lining and canopy tours, just to name a few things. There are also volcanoes and surfing beaches and much more, plus a very good backpacker infrastructure of cheaper hotels and hostels.
Take Meal Times in Stride – Although I had intentions of planning keto/low carb meals by researching restaurants beforehand, especially at Disney, that never happened. Did I mention I have four kids? Yea, I don’t have a lot of downtime. Even so, I never had any problem finding foods that I could eat at restaurants. When we were out and about in Orlando, if we were thinking about eating at a restaurant that I hadn’t eaten at before, I looked their menu up online in the car before walking in. As long as they had a keto/low carb option, it was a go. I wasn’t picky. In fact, I ate either a bunless burger or bunless grilled chicken club almost every day at Disney or Universal. When my kids wanted to order pizza one night at our condo, I ate the toppings off with a fork. When they wanted Mexican food, I enjoyed Chicken Fajitas on a bed of lettuce. Whatever my family wanted, I found a way to make it work, and I never felt deprived. We typically ate breakfast at our condo, a late lunch (at Disney or Universal if it was a park day), then a late dinner out. By doing so, we also saved a great deal of money since eating inside the park can be so expensive. Since we stayed off site, the dining plan wasn’t an option.
I have been reading the thread with great interest. I took my 2 daughters aged 11 and 18 to SE Asia in December and they loved it. Siem Reap – lovely vibe over new year and not too busy. Would stay longer than 3 days because the heat and humidity slows you down and you would rather want to cool down in the hotel pool in afternoons and try and squeeze in more than 1 wat in a day. Easy to get around and good food and vibe in Pub Street.
Bali, which is just south of the equator, would be a good choice in November. It does rain a bit that month, but they are summer storms that tend to only last 30 minutes or so. It’s a wonderful island with great prices on most things, including massages. The complicated thing about Bali is that the main tourist areas of Kuta, Legian, and Seminyak are now so crowded that they can be unpleasant. I spent a month there again earlier this year, and I don’t think I’ll go back to that part of the island.
The Maldives could be great if you can afford it. December is the most expensive month there, at least the second half of December. There are about 100 private-island resorts there, and most of them have water villas that start at around US$400 per night and go WAY up from there. But island rooms are cheaper. I wouldn’t recommend going to Male or any of the other populated islands that have several smaller hotels. It’s just not the same experience that you get from the private-island resorts. I can help much more with this if you decide to go to the Maldives.

Montego Bay is home to one of the Caribbean's busiest airports in addition to a few hundred hotels and resorts, so it's an ideal destination for even a shorter getaway in November. The rainy season is over but the busy holiday peak season doesn't begin until just before Christmas, so the weather is perfect and hotel prices are still very low. Flights should be cheap from most hub cities as well, so even a long weekend is within reach for budget travelers this month.
The reason for the recommendation is that Bali is not only a yoga and “spiritual” hot spot, but it’s also the most popular island for solo women travelers in the region. The book and movie “Eat, Pray, Love” was inspired by this trend, and they have in turn inspired thousands of solo female visitors to go there and stay for long periods, particularly in and around the Ubud area. It’s gorgeous and quite cheap once you get there, and the locals are generally gentle and kind to all. Most other tropical hot spots in Asia have far more solo male visitors than solo females. Just avoid lingering in the Kuta Beach area, because it’s packed with bars and loud backpacker party people. Most of the rest of the island is quite mellow.
However, I also happen to be an athlete and about a month ago I reached the point where I had almost no power, no energy, constant hunger (and “hanger”) and cravings for practically anything bad like alcohol, sweets, carbs, artificial sweeteners or energy drinks. I tried to fight it. I started over multiple times. At one point I just couldn’t stick to any sensible dietary routine for longer than a day or two. Intermittent fasting, OMAD (one meal a day), TMAD (two meals a day) and keto all seemed to stop working.
The easiest meal of the day to eat out is by far breakfast. Many places offer eggs, omelets, sausage, bacon, or other type of high-fat foods that are easy to order without too much effort. Dive bars or café’s will usually be quick to serve and have some great tasting food. We had the pleasure of eating breakfast at a great place called The 5 Point Café, which featured a fantastic omelet with smoked salmon (pictured below) and hollandaise sauce.
Late October (when the rains end) through February is an exceptional time to visit the northern part of the country, from Sukhothai through Chiang Mai and Chiang Rai. The King’s Birthday, on December 5, ushers in the festive season (Christmas and New Year’s certainly aren’t traditional holidays here, but many Thais celebrate them anyway) and cooler, less humid weather. In general, the beaches are blissful from the end of December through March. Mid-November through January see the lowest temperatures and least humidity in Bangkok.
All of my best suggestions are in the article above, but I’ll try to expand a bit more. The tricky thing, as you probably know, is that November is part of the heavy rain season in most of Thailand and the other popular southeast Asian countries. There are wet months in summer with just short rain storms, but in November it can often be rainy all day.
Lastly, while you’re stocking up on your morning coffee or mid-morning snack, you can many times see hard boiled eggs, snack-size cheeses, and small packs of nuts available in the display cases. While this is common in gas stations and convenience stores, more and more coffee shops and cafés are offering elevated versions of these as well. These are a quick and easy way to get some keto food while you’re sightseeing or running to a meeting.
Not all the extra ingredients are keto friendly. Some of the dressing mixes are high in carbs as well as some of the extra ingredients such as tortilla strips and croutons. Depending upon how many carbs you eat in a day you may want to avoid those mixes, or at least remove some of the ingredients, and stick with the mixes that only contain salad greens.
Back in 2008, we asked chef Stephanie Kimmel from Eugene's Marche restaurant to take a stab at updating Thanksgiving's well-worn green bean casserole -- you know the one we're talking about, with the canned beans and mushroom soup, topped with fried onions. Kimmel's from-scratch version features colorful fresh green beans that are baked in a homemade white sauce that tastes cleaner than the 1950s tinned three-can combo. If Thanksgiving dinner doesn't feel complete without a green bean casserole, this is the one to make!
The period between November and April is the Philippines’ “dry season,” which is generally considered the best time of year to visit. And while February and March can be unbearably hot, in December, you’ll find pleasant temperatures and sunny days. Start your trip in Manila (check out the funky Henry Hotel in Pasay City), then retreat to one of the country’s picturesque private islands. Our recommendation? Amanpulo on Pamalican Island, where there’s something for everyone: scuba diving, moonlit boat rides, tennis, yoga, and five-star service.
Thank you for the kind words. I know what you mean about the image of Thailand and Bali, particularly among Australians. On one hand you could go to either of those places and easily avoid the most notorious party neighborhoods, but it’s probably easier to head somewhere else since both of those places are so crowded that time of year anyway. I do have a few suggestions, which I’ll describe briefly and then if you want more details about any that appeal to you I can do that in a follow up comment.
This classic Thanksgiving side came from Julia Child. We don’t see many creamed vegetables any more, except maybe creamed corn or spinach, so this might be a bit of a novelty. And it’s delicious. If people complain about the richness, just remind them that Thanksgiving dinner is supposed to be a feast, right? (And you can get by with an awful lot be invoking the name Julia Child).
