Say Hydrated – This is a no-brainer and one of the most significant challenges for me. I never drink enough water, but it was hot this week in Florida when we were at Disney, and I could tell such a difference in how I felt when I was hydrated. I felt like it made it easier to stay strong and stick to eating low carb/keto as it helps to quench false hunger.
On my own trip I spent 3 nights on the North Island after leaving Auckland, and then 4 nights on the South Island. The South Island is more scenic and interesting, and much less crowded, so I would have liked to have stayed another 2 or 3 nights if I had the time. So I’d recommend 3 or 4 nights on the North Island and 5 to 7 nights on the South Island. With smaller towns and smaller crowds on the South Island, that is the better place for star gazing, though most of the North Island is fairly empty as well. Eat Breakfast In – I know this isn’t always possible, and it’s certainly not a deal breaker, but we ate breakfast in most mornings. This started my day off on the right foot, and I could make my eggs exactly how I like them. I didn’t get tired of eating bacon and eggs all week, but if you do there are so many keto breakfast options if you’d prefer a variety of foods. For me, this was budget friendly, and I didn’t have to buy a ton of extra groceries. Also, I have a big family with two of my four kids being 3 and under. Hotel prices do reach their peak in Cairo starting late in December, so it's best to go early in the month if possible. Traveling in December means you either fully lean into the holiday season, or else escape it entirely and flee to somewhere warm. Personally, I try to appreciate the cold weather while we have it and max out on warm seasonal beverages, colorful lights, soft snow, and good company. True, some places are overwhelmed by the capitalist engine that powers Christmas, but you can still get a non-denominational-winter-wonderland fix, if you know where to look. No matter your travel preference, there’s a perfect place in this world for you to bask in those final sunsets of 2018.
It looks like you’ve been to most of the more popular options for winter holidays already, and since you listed them I assume you want to go somewhere new. The one that is missing, which I think could be perfect for you, is the Guanacaste area in northern Costa Rica. The weather will be perfect and you should be able to get a reasonably priced flight into nearby Liberia Airport. There are a variety of smaller towns along those beaches, and Tamarindo might be the most famous. They offer a mix of traditional hotels and resorts in smaller towns along with newer 4-star and 5-star hotels on large properties that tend to be away from the towns. The weather will obviously be similar to Panama, as long as you were on the west coast. Costa Rica is the adventure capital of Latin America and one-third of the country is national parks, so there is plenty to see and do. There isn’t much history there, but you can’t have everything.

Since flights to Mexico City from the US and Canada are usually quite cheap this time of year as well, this could be a perfect short cultural holiday. This city has great shopping, dining, and nightlife, and the central historic and tourist districts are far safer than most people would expect. There are ruins just out of town as well, so a bit of everything is available.
